It was my baby boy’s 3rd Birthday last week and we made these quick, easy and relatively healthy oat cup cakes! In fact they’re so easy to make the kids can help all the way through!

Ingredients

  • 2 cups of oats (mulled in food processor)
  • 1/2 cup blueberries
  • 1/2 cup pear (puréed)
  • 1/4 cup cocoa
  • 1/4 cup maple syrup
  • Tsp baking powder
  • Tsp bi carb
  • Tbsp vanilla extract

Set oven to 180 (fan forced). In a large bowl combine oats, cocoa, baking powder, bi carb, stir through vanilla extract, maple syrup and pear. Add blueberries and divide between 12 cupcakes. Bake for 25 min.
